- Get 1 1/2 cup rice
- Get 1/2 cup tuar dal
- Prepare 1/2 cup moong dal
- You need 1/2 cup urad dal
- Use 1/4 cup chana dal

- Take 3 green chilies
- Use 7-8 garlic cloves
- Get 1 inch ginger
- Get 4 tbsp Sesame seeds
- Prepare 3 tbsp jeera(cumin) seeds
- Prepare 2 tbsp Ajwain (Carom seeds)
- You need to taste Salt
- Prepare 1/2 cup Oil
- Use 2 tbsp saunf( fennel seeds)
- You need 1/2 tsp turmeric powder
- Get to taste Red chilli powder
- Get to taste Sugar
- Get 1 pinch hing/asafoetida
- Provide 1 tsp curry leaves
- Use 1 Lauki ( bottle gourd)grated
Steps to make Handvo:
- Soak rice and all the daals for 6 hours
- After 6 hours grind that mix with ginger garlic and chilli
- Add curd to the mixture and leave it covered for 6 hours or overnight
- Now the mixture will be fermented, add some sesame seeds, sauf, jeera, ajwain, salt turmeric powder, half tbsp sugar and red chilli powder and grated Lauki
- Heat a Kadhai with half cup or 7/8 tbsp oil, add mustard seeds, jeera, hing, sauf, curry leaves. Pour the mixture to this and cover it. Cook for 20 minutes, check with a knife if cooked flip it around and cook from the other side for next 15 minutes to make it crispy.
