Instructions to make Jawar dosa:
  1. Mix jawar flour and curd, then add water to make semi thick batter. Leave it for 3-4 hrs. So it will rise nicely and became fluffy texture.
  2. Add chopped carrot, cabbage, onion, tomato into pressure cooker. Add enough water, salt and turmeric powder and do 2 whistle. Wait to cool down a little. Then open the cooker and crush with hand blender and make consistency as sambhar.
  3. Heat oil into tadka pan, add mustard seeds and wait to crackle. Then add asfoitida, curry leaves and pinch sambhar masala. Turn off the heat and add this into prepared sambhar. Heat again, add chilli powder and sambhar masala, then simmer for 4-5min.
  4. Heat oil in a pan, add mustard seeds and wait to crackle, add asfoitida, curry leaves, chilli chopped, and saute for a while. Then add chopped onion and saute till translucent, then add tomato and salt, cook till tomato became soft. Then add cooked potato and fresh toor dana. Add turmeric powder and salt to taste. Mix well and cook for 2min. Then keep aside.
  5. Mix the flour batter once and add salt to taste. If needed add some water to adjust consistency.
  6. Heat dhosa tawa and spread 3-4tbsp of batter on it. And cook for 2min. Then turn the dhosa and again cook for a min on 2nd side. Or till crispy. Add 2-3 drops of oil if u want. I avoided here to add.
  7. Serve hot with, vegetable sambhar, toor dana bhaji and coconut chutney.
