  1. For the chutney, deseed some dates and boil it for 5 minutes with very less water. Grind the dates along with tamarind, salt, roasted cumin and red chilli. Add water if required.
  2. In a bowl mix besan, salt, turmeric, garlic chilli paste, asafoetida, 2 tbsp oil, eno, vinegar. Mix it by slowly pouring water to make a thick consistent batter.
  3. Sieve the batter, to remove lumps. Grease a dish in which you can steam the dhokla. I made the dhokla in microwave.
  4. Grease a dish in which you want to steam or microwave the dhokla. After pouring the batter microwave it for 4-5 minutes. Check the centre of dhokla by using a toothpick if it's cooked. Or else you can microwave it for another minute.
  5. Take out the dhokla onto a plate and cut into blocks. Temper it with mustard, sesame seeds, green chillies, curry leaves. Serve it with tamarind and dates chutney.
